Our Future Generation
We spent a wonderful morning on February 1st speaking to our future chefs and restaurateurs at the Catering School in Limerick Institute of Technology where we presented The French Table restaurant to the students. It is so refreshing to see that so much enthusiasm exists among our young people to work in what has to be said is a tough industry.
Thomas gave a cookery demonstration assisted by 2 young trainee chefs where he prepared marinated salmon, a selection of charcuterie and the traditional french beef bourguignon. He also spoke about wine and gave a little tasting of a Pinot Blanc and Pinot Noir from his native Alsace.
Deirdre gave a background on what was involved in setting up the business and how The French Table came into being. We spoke about how our goals when we opened the restaurant 8 years ago have changed significantly now, and how important it is to be aware of the constant need to adapt and improve the business.
