Festive Holiday Canapés Recipes
It’s beginning to look a lot like Christmas. With only weeks to go the team at The French Table restaurant are beginning to prepare lots of tasty treats for the special Christmas Season. We are delighted to help celebrate this special time by making your Christmas Nights out (or afternoons!) a truly memorable one.
For those of you who enjoy entertaining at home, Thomas has shared some of his recipes for some tasty party nibbles for you to try. This selection includes Country Style Flaky Pastries, Trout Rillettes with Chives, Crispy Vegetable & Goats Cheese Roll, Lemon Madeleines, Almond Tuiles and Vanilla Crème Brûlées.

1. Country Style Flaky Pastries
Ingredients
- 20g Dijon Mustard
- Flaky Pastry
- 300g Minced Pork
- 30g Breadcrumbs
- 4g Salt
- Chopped Parsley & Chives
- Cognac or Port
- 2 Eggs
- 1 Egg Yolk
- 20g Pistachios or Hazelnuts
Mix all the ingrediants together and add pepper
Roll out the flaky pastry
Spread the mousse on the pastry and fold it over so it is covered
Brush with egg yolk and refridgerate
Bake in the oven at 180ºC for 25 min
Leave to cool for 20 minutes
Cut in slices
2. Trout Rillettes With Chives
Ingredients
- 200g Sea Trout Fillets
- 50g Crème Fraiche
- Juice of 1 Lemon
- Chopped Chives
- 1cl White Wine
Poach the trout fillet in the white wine
Gently break up the fish meat with a fork
Add the crème fraiche, chives & lemon juice
Season with salt & pepper
Shape into quenelles with two large spoons
3. Crispy Vegetable & Goats Cheese Roll
Ingredients
- 5 Sheets of Brick Pastry
- 1 Carrott
- ½ Celeriac
- 1 Leek
- 2 Goats Cheese Rounds
- 10g Grilled Sesame Seeds
- Sesame Oil
- Chopped Parsley
Cut the vegetables in julienne
Cook them in the sesame oil and season
Leave to cool
Mix with the goats cheese, parsley & grilled sesame seeds
Roll in the brick pastry and gently flatten with your hand
Colour them in the pan
Place them on kitchen paper to absorb the oil
Serve warm
4. Lemon Madeleines
Ingredients
- 4 Eggs
- 140g Flour
- 125g Melted Butter
- 120g Sugar
- 1 Teaspoon Baking Powder
- Honey
- Juice of 1 Lemon
Sieve the flour & baking powder
Mix all the ingrediants together
Leave to rest for 20 minutes in the fridge
Fill the madeleine moulds by using a piping bag
Bake in the oven at 180ºC for 8 minutes
Leave to cool for 10 minutes before removing from the moulds
5. Almond Tuiles
Ingredients
- 200g Flaked Almonds
- 200g Icing Sugar
- 50g Flour
- 2 Whole Eggs
- 2 Egg Whites
- 50g Butter
Melt the butter
Mix the almonds with the sieved sugar & flour
Lightly beat the eggs
Mix all the ingrediants together
Allow to rest for 30 minutes
Form little heaps of the mix on a non stick tray
Flatten with a fork
Bake in the oven at 220ºC until golden brown (4-5 minutes)
Gently peel off the tray and place them around a rolling pin to give them a curved shape
Allow to cool
6. Mini Vanilla Crème Brûlée
Ingredients
- ½ litre Milk
- ½ litre Cream
- 10 Egg Yolks
- 250g Sugar
- 1 Vanilla Pod
- Brown Sugar
Bring the milk, cream & scraped vanilla pod to the boil
Beat the sugar & egg yolks
Combine together both mixtures
Allow to cool
Pour into ramkins and bake in the oven for 1h30 at 100ºC
Allow to cool, sprinkle with brown sugar and caramelise with a blow torch
